Julie's 180-day fermented gochujang met Patrick's oak-smoked Bramley apples and Somerset cider vinegar. We didn't make a fusion sauce; we made a bridge. Rich, smoky, with a sharp ferment-driven kick that cuts right through beef fat.

Spread on brioche buns, glaze over grilled mushrooms, or dip your chips in it. Sometimes we run out.
